{"id":999,"date":"2014-03-18T10:00:15","date_gmt":"2014-03-18T09:00:15","guid":{"rendered":"https:\/\/blog.iese.edu\/doing-business\/?p=999"},"modified":"2014-03-18T20:59:45","modified_gmt":"2014-03-18T19:59:45","slug":"how-what-we-eat-affects-our-health-and-the-environment","status":"publish","type":"post","link":"https:\/\/blog.iese.edu\/doing-business\/2014\/03\/18\/how-what-we-eat-affects-our-health-and-the-environment\/","title":{"rendered":"Food and the environment"},"content":{"rendered":"<p><a href=\"http:\/\/www.amazon.com\/The-Meat-Racket-Takeover-Americas\/dp\/1451645813\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1000\" alt=\"imgres-2\" src=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/imgres-2.jpg\" width=\"182\" height=\"277\" \/><\/a>A recent <a href=\"http:\/\/www.nytimes.com\/2014\/03\/13\/opinion\/kristof-the-unhealthy-meat-market.html?_r=0\">column<\/a> in <em>The New York Times<\/em> by Nicholas Kristof, convinced me to turn my attention away from Crimea and focus on a completely different issue which is <strong>how our dietary choices affect our natural environment<\/strong>. Kristof cites a new book by <a href=\"http:\/\/www.christopherleonard.biz\/\">Christopher Leonard<\/a> about <a title=\"Tyson Foods\" href=\"http:\/\/www.tysonfoods.com\" target=\"_blank\">Tyson Foods<\/a> and the concentration of the American meat industry and how that concentration has lowered prices but has had devastating impact on the structure of farming communities and the <strong>health of the people<\/strong> who eat the pork, chicken and beef that the system produces.<\/p>\n<p>Just for the record, I eat turkey once a year on Thanksgiving and do my best to find natural, free range birds. The rest of the year I eat lots of vegetables and fish. When I make lamb on the Barbecue for my daughters and friends I try to either go to the local market where the guy gets it straight from the farm or go to <a href=\"http:\/\/www.ecoveritas.es\/barcelona\">Veritas<\/a>, a small, Catalan version of <a title=\"Whole Foods\" href=\"http:\/\/www.wholefoodsmarket.com\" target=\"_blank\">Whole Foods<\/a> that sells organic lamb. It costs more but tastes better and is less likely to pose any health risks.<\/p>\n<figure id=\"attachment_1001\" aria-describedby=\"caption-attachment-1001\" style=\"width: 240px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/CCircle-10.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1001 \" alt=\"Whole Foods Market @ Columbus Circle\" src=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/CCircle-10-300x159.jpg\" width=\"240\" height=\"127\" srcset=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/CCircle-10-300x159.jpg 300w, https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/CCircle-10-624x331.jpg 624w, https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/CCircle-10.jpg 801w\" sizes=\"auto, (max-width: 240px) 100vw, 240px\" \/><\/a><figcaption id=\"caption-attachment-1001\" class=\"wp-caption-text\">Whole Foods Market @ Columbus Circle<\/figcaption><\/figure>\n<p>Whole Foods, of course, \u00a0has built a <a href=\"http:\/\/www.wholefoodsmarket.com\/sites\/default\/files\/media\/Global\/Company%20Info\/PDFs\/Q413financial.pdf\">$ 12.9 Billion<\/a> dollar business catering to people who are willing to pay a bit more for food they perceive to be more natural and wholesome. Meanwhile Tyson foods reported sales of $ 34.4 Billion and report that they sell about 20% of the all the beef, chicken, and Pork in the United States!<\/p>\n<p><a href=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/sustain2012_4-51-1.png\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-1002 alignright\" alt=\"sustain2012_4-51 (1)\" src=\"https:\/\/blog.iese.edu\/doing-business\/files\/2014\/03\/sustain2012_4-51-1-150x150.png\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Tyson also publishes a sustainability report and while they do appear to be reducing water consumption there is no mention of methane.<\/p>\n<p><b>Food animals and the environment<\/b><\/p>\n<p>Although it is not the reason I eat so little meat, the facts are that animal husbandry is a major contributor to greenhouse gas. An article in <a href=\"http:\/\/www.scientificamerican.com\/article\/the-greenhouse-hamburger\/\">Scientific American<\/a> cites a study by the United Nations Food and Agriculture Organization that attributes between 14 and 22% of greenhouse gasses to come from meat production. The <a href=\"http:\/\/www.epa.gov\/climatechange\/ghgemissions\/gases.html\">EPA<\/a> says that 8 % of greenhouse gas comes from agriculture and <a href=\"http:\/\/knowledge.allianz.com\/environment\/climate_change\/?651\/ten-sources-of-greenhouse-gases-gallery\">Allianz<\/a>, an insurance company says livestock methane accounts for 5.1 % of greenhouse gas. Pick a number.<\/p>\n<p>Whatever the CO2 number is there are other ecological costs to raising, slaughtering, and processing meat. According to the chemical company <a href=\"http:\/\/www.gracelinks.org\/1361\/the-water-footprint-of-food\">Grace<\/a>, for example, it takes an astonishing 1,800 gallons of water to produce a pound (400 grams) of beef!<\/p>\n<p><b>Water Stress and Global Progress<\/b><\/p>\n<p>Of all the natural resources we need, water is perhaps the most essential for life and has been getting increasing attention over the last ten years. There is even a <a href=\"http:\/\/www.waterpolitics.com\/\">web page<\/a> dedicated to water politics.<\/p>\n<p>In fact, a number of regions are considered under severe water stress and California, which <a href=\"http:\/\/www.cdfa.ca.gov\/statistics\/\">reportedly<\/a> produced 15 and 7 % of U.S. food in dollar terms in 2012 is experiencing its worst drought in hundreds of years.<\/p>\n<p>Now I do not suggest that anyone become a vegetarian in order to save the planet.
